Most posts I found for these were not Horde friendly, so this is what I put together.
Some books are found in multiple locations along your journey, just read them all.
Please excuse some of the greater detail in directions; this was also made for use by my 9 year old daughter.
A real good tip for Critter hunting – Make 2 macros
1) /tar cat (or critter you are looking for)
2) /love (you don’t have to see it to love it)
All 1st listed locations have been confirmed for books & critters, some secondary locations are confirmed

Cat: Silvermoon City – east side of Royal Exchange
The Betrayer Ascendant: Silvermoon (Walk of Elders, in Shop of Valaani's Arcane Goods, use mini-map reagents finder)
Toad: Eversong Woods – around Stillwater Pond / Toads are all over Wetlands also / The Steamvault
Frog: Eversong Woods (around Stillwater Pond, more around West Sanctum) / The Steamvault
Crab: Ghostlands (shore west of Golden Mist Village) / The Steamvault
Take transporter back to Undercity, (go to Brill Inn and note location of Mage trainer upstairs for later use in Wetlands), now run to

Run back to Tarren Mill and fly to Hammerfall, run from Hammerfall to Wetlands
The Kaldorei and the Well of Eternity: Wetland - Menethil Harbour Inn, inn is same layout as Brill Inn. Directions to inn: thru entrance, go left around castle about 1/3 of circle, inn will be on your left, remember where Mage trainer was in Brill?, that is where table with book is located.
Ram: Wetlands – thru series of tunnels located at Dun Algaz on southern border (caught one just inside first tunnel)
Run back to Hammerfall and grab flight to Stonard (long flight = break time)
The Dark Portal and the Fall of Stormwind: Stonard (bottom floor of the tower)
Rise of the Horde: Stonard (top floor of the tower)
The New Horde: Stonard ( top floor of the tower)
Group with someone that has a cleared Kara ID
Karazhan
The Guardians of Tirisfal: Karazhan, Guardians Library (from Curator, all the way down ramp, on table straight in front of you)
The Last Guardian: Karazhan, Guardians Library (from Curator, jump off by camp fire, turn around, on table to your left)
Run from Kara into Duskwood, run cross country NW into Elwynn Forest
Fawn: Elwynn Forest – Eastvale Logging Camp or road leading to Stormwind –have not been able to find a better location (deer, rabbits and cows are also found here)
At this point I would hearth back to Shattrath, port to Orgrimmar, take zep to Grom’Gol Base Camp and fly to Booty Bay
Sunwell - The Fall of Quel'Thalas: Booty Bay Inn (2nd floor)
The Sentinels and the Long Vigil: Booty bay (Sea wolf McKinley's house, top level), use the building next door and cross the bridge.
The Twin Empires: Booty Bay (Sea Wolf McKinley's house, bottom floor) / Gadgetzan Inn,
Wrath of the Soulflayer: Booty Bay (Sea Wolf McKinley's house, bottom floor) / Gadgetzan Inn
Take boat from Booty Bay to Rachet
Kalimdor
Charge of the Dragonflights: Rachet, go right engineering supplies hut
Mount Hyjal and Illidan's Gift: Ratchet Inn
Run south along shore to Northwatch Hold
Lethargy of the Orcs: The Barrens (Northwatch Hold, top floor of first tower)
Chicken: The Barrens – Barrens (Northwatch Hold) / Hillsbrad Foothills (at farm west of Tarren Mill)
Run thru Camp Taurajo into Mulgore
The Battle of Grim Batol: Mulgore (SW of TB, Bael'Dun Digsite on table under tent)
Empires' Fall: Mulgore (SW of TB, Bael'Dun Digsite on table under tent), Gadgetzan Inn
Ironforge - the Awakening of the Dwarves: Mulgore (SW of TB, Bael'Dun Digsite on table under tent)
At this point you should have completed WELL READ (/cheer)
Run to Thunder Bluff and fly to Un’Goro (Marahal’s Refuge)
Parrot: Un'Goro Crater – SW of gorilla cave by big tree
Back to Marshal’s Refuge and fly to Crossroads (long flight = break time)
Gazelle: The Barrens – Crossroads, west on other side of large hill, a group (not infected)
Prairie Dog: The Barrens – Crossroads, east about half way to hill
Fly from Crossroads to Ashenvale (Splintertree Post)
Squirrel: Ashenvale – Spintertree Post (in town)
Deer: Ashenvale – Splintertree Post (in town or east of town at Satyrnaar entrance)
Fly from Splintertree to Orgimmar
Hare: Durotar – exit front of Org, turn right, by farm
Swine: Durotar - exit front of Org, turn right, by farm
And hearth back to Shattrath
Ewe: Shattrath City – Lower City by daily cooking quest giver
Skunk: Terokkar Forest – SE just outside of Shatt
Now when expansion comes out, you only have two critters left to find (/cheer)
Steam Frog: (WotLK?) can be found in the Borean Tundra in any pond of the Flood Plains
Borean Frog: (WotLK?) can be found in the Borean Tundra, by the Steam Springs (east of the Tundra and west of the Taunka village Taunka'le)
